In developing the paradoxical idea of luxury camping and gourmet campfire cuisine we realised that we were setting ourselves a task as difficult as it was innovative. Why, after all, if you love camping out and being at one with nature in the bush should this have to mean 'roughing it'? |
| Well, the answer is quite easy - providing gourmet
food from a daily relocated camp kitchen is quite a challenge, even for
our skilled and dedicated Chuck-wagon Charlies. Our breads are baked fresh
each day, and our sauces are all genuine works of art - definitely nothing
comes out of a packet!
The meats, which are grass-fed and usually from our own farm properties, are - like all of the other foods - brought to the campsites fresh every day. Chilled, not frozen! Fresh fish is served - but only if it is caught by our trekkers or other friends or associates that day or overnight. Naturally, our vegetables and salads are carefully selected and - whenever possible - organically grown. We pride ourselves on our selection of wines - no Chateau Cardboard winecasks here! The Boss is delighted to have found an excuse - and a tax deduction - for pulling the corks and sampling the very best of our wonderful Australian wines to stock our range. And there is always a stock of iced beers - the great Australian 'Frosty Fosters' included - at the campsites as well as fruit juices, cordials and other refreshments. Although the waters of the various creeks are acceptable for drinking, bottled water is available throughout each trek - for your safety. See - we have tried to think of everything! |
